Stuffed Peppers!

Here is a super easy recipe that I created. It’s vegetarian, delicious, and healthy!

Ingredients:
1 c brown or wild rice
2 c water or vegetable stock
2 tbsp olive oil
2 cloves garlic, minced
1 small onion, minced
1 head broccoli, cut into small florets
2 tomatoes, seeded and chopped
2 c spinach, washed and trimmed
zest from 1/2 lemon (optional)
1 can aduki or black beans, drained and rinsed
1/2 cup shredded cheddar cheese (optional)
salt and pepper to taste
2 red, yellow, or orange peppers, cored

Begin by preparing rice. Place rice in pot and add water or stock. Bring to a boil. Reduce to a simmer and cover. Cook for about 45 minutes, or until all water is absorbed.

Meanwhile, heat up olive oil in a pan on medium heat. Once hot add garlic and onion. Saute for about 5 minutes, or until onions just begin to turn golden. Add broccoli, and continue to saute until broccoli begin to feel tender. Add tomatoes and spinach and continue to saute until both are tender. Add aduki beans, lemon zest, and rice, and stir everything together until well mixed. Add cheese. Season with salt and pepper.

Preheat oven to 375. Stuff mixture in peppers and place in heated oven. Cook for about 25 minutes or until peppers begin to soften. Enjoy!

Just a few notes: Give the extra “stuffing” to kids. Ruby loves it, especially because it is so colorful! Also, I sometimes substitute the rice for quinoa or another grain. This recipe is very easy to manipulate so have fun with it!

Waffles and fevers.

Poor Ruby has a 100 degree fever today and a runny nose with a cough. But, she’s still in good spirits, and played peek-a-boo with me while holding her waffle.

She’s already on her third nap and it’s only 1:00! Hopefully the echinacea will help, and she’ll feel better soon.

Morning Adventures

This morning Ruby decided to “get dressed.” She chose a too small T-shirt, baby legs, mama’s orange shoes, and to top it all off, as many clips as she could humanly fitĀ  in her hair. Needless to say, she looked gorgeous.

The dog book

Ruby is obsessed with dogs. Absolutely and completely obsessed. Here is a pic of her a few mornings ago reading a book about her favorite animals. We read this book together about 20 times a day. I’d like to say it’s boring, but the second to last page in the book always makes me laugh: “Bark dog. Howl dog. Sniff the tree. All dogs poop. (pull out tab, dog lifts leg.) All dogs pee.” Ha!

Inauguration Day!

Ruby took a nice early nap today and was up to watch Obama’s speech with me at noon. It was inspirational and moving, and I am so proud that he is our 44th president. I feel incredibly lucky to be alive for this historical day, and that I got to watch our new president speak while I exchanged eskimo kisses with my beautiful daughter. I won’t ever forget it.

Now, with this long list of issues ahead of him, I am more confident than ever of Obama’s ability to reunite. I hope we can all go into this with an open mind and an open heart. Unity, togetherness, is what we need!

Our little clan

Because so many of you are so far from us, we’ve decided to create a special spot to share stories about our little clan. The Candee Shoppe is for all of our family and friends, so our goings on are well known, well shared, and well recorded. It’s seems life is always pretty interesting around here with a silly toddler, a wild dog, and two parents trying to keep their heads on straight. And since life is flying by, it’ll be nice to archive everything we can!

We’ll try to include as much as possible…Ruby’s milestones and favorites, new recipes and other news, recent photos and accomplishments, and even the mundane day to day things. Enjoy!

The backyard

About a week ago, before the really cold weather came, Ruby and Vi played ball in the backyard, while Brian raked up sticks from the wind storm. Ruby happily volunteered to help him carry any sticks he missed to the bushes. When we finally came back inside, Ruby and I poured some water for the doggie and put some water on the stove for hot tea! It was the perfect way to end our chilly play time.
