Stuffed Peppers!

Here is a super easy recipe that I created. It’s vegetarian, delicious, and healthy!

1 c brown or wild rice
2 c water or vegetable stock
2 tbsp olive oil
2 cloves garlic, minced
1 small onion, minced
1 head broccoli, cut into small florets
2 tomatoes, seeded and chopped
2 c spinach, washed and trimmed
zest from 1/2 lemon (optional)
1 can aduki or black beans, drained and rinsed
1/2 cup shredded cheddar cheese (optional)
salt and pepper to taste
2 red, yellow, or orange peppers, cored

Begin by preparing rice. Place rice in pot and add water or stock. Bring to a boil. Reduce to a simmer and cover. Cook for about 45 minutes, or until all water is absorbed.

Meanwhile, heat up olive oil in a pan on medium heat. Once hot add garlic and onion. Saute for about 5 minutes, or until onions just begin to turn golden. Add broccoli, and continue to saute until broccoli begin to feel tender. Add tomatoes and spinach and continue to saute until both are tender. Add aduki beans, lemon zest, and rice, and stir everything together until well mixed. Add cheese. Season with salt and pepper.

Preheat oven to 375. Stuff mixture in peppers and place in heated oven. Cook for about 25 minutes or until peppers begin to soften. Enjoy!

Just a few notes: Give the extra “stuffing” to kids. Ruby loves it, especially because it is so colorful! Also, I sometimes substitute the rice for quinoa or another grain. This recipe is very easy to manipulate so have fun with it!
